Too Much Watermelon?

In my family of four, we can never eat an entire watermelon before we either get sick of it or it starts to go mushy. As it pains me to not eat perfectly good food, I have found a solution. I have been making watermelon pops and my kids LOVE them! You can either use the juice of the fruit that drains in the bottom of your storage container, or throw it in a blender after picking out the seeds. Then fill your ice pop holders for a tasty, healthy, affordable treat. If you prefer, you could also freeze them in ice cube trays and use the frozen cubes as a flavor booster for your morning smoothie. Making the most of what we've got can actually be delicious and rewarding!
